500 g beef shank or stewing beef, cut into chunks 1 1/2 liters ( 6 cups ) water 1 small cinnamon stick 4 slices galangal root 1 tablespoon crushed coriander roots 1 teaspoon salt 2 stalks lemongrass, tender inner part of bottom third only, bruised 4 kaffir lime leaves, torn into small pieces

Garnishes
1 stalk celery, thinly sliced 6 letteuce leave, sliced 2 tablespoons freshly squeezed lime juice 3 bird's eye chilies, deseeded 2 springs coriander leaves, minced ---------------------------------------------------------------------------
1 Bring all the ingredients to a boli in a stockpot or large saucepan over high heat, stirring to combine. Reduce the heat to low and simmer coverd for about 1 hour, until the beef is tender. 2 Stir the Garnished and simmer for 1 to 2 more minutes and remove from the heat. Serve hot.
I am not afraid of spicy food so I think this one is delicious , I am gonna try it soon
